These are all simple and easy to prepare recipes using Venison. Great party/finger foods for the upcoming holidays. I’m making a tray with a sampling of the recipes below.
Venison Salisbury Burger & Gravy
Just pat out burgers and pan fry (you can make these slider size for party food)
*Note – When using the Salisbury Burger from Flowers’, there is no need to add additional ingredients. These burgers are great ladled with your favorite gravy.Fry the patties in a skillet with 1 TBPS butter and 1 TBPS oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
1 whole onion, halved and thinly sliced
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
4 dashes Worcestershire
1 teaspoon cornstarch
Salt and pepperFor the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft. Add the beef stock, ketchup and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the gravy. Stir and cook to reduce.Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes..
Venison Appetizer Meatballs & Sauce
2 lbs. Venison Hamburger
I package McCormick Meat Loaf Seasoning Mix (follow recipe on pack)
Form into 1 1/2 inch balls and bake on a cooling rack (will help meatballs cook evenly) placed on a cookie sheet at 350 degrees for about 30 minutes..
Meatball Sauce (25 – 30 Meatballs)
1 cup Ketchup
2 TBPS Worcestershire Sauce
1 TBPS Sugar
1/2 tsp Onion Salt
1/4 tsp Garlic Powder
2 TBPS White Vinegar
Mix all ingredients and simmer on stovetop.
Venison Summer Sausage Cheese Ball
8 oz block cream cheese (softened)
2 green onions chopped
4 oz Summer Sausage chopped
1 tsp of Lowery season salt
1 tsp Worcestershire sauce
Chop summer sausage (I put mine in a chopper). Save about 1/4 cup on the side. Mix cream cheese, summer sausage, onions, salt, and sauce. Mix well and chill for an hour. Take mixture and form a ball and roll in remaining chopped summer sausage. Serve with crackers..
Glazed Venison Snack Stick Bites
16 oz Snack Sticks cut into 1 1/2 inch bite size pieces
12 oz bottle Chili Sauce
10 oz jar grape jelly
Combine chili sauce and grape jelly in a large saucepan; cook over medium heat, stirring constantly, 3 minutes or until mixture begins to boil. Add snack sticks; cook an additional 3 minutes until thoroughly heated, stirring often.
